Garden Salad

It’s that time of year when the garden pays off with fresh veggies.  I love this recipe because I can put in whatever comes out of the garden.

Garden Salad

2 cucucumbers, diced

1 red pepper, diced

1 green pepper, diced

1 red onion, diced

Black olives, sliced

Romaine lettuce

¼ cup feta cheese, crumbled

Optional  –  Radishes, sliced

3 hardboiled eggs, sliced

Vegetable Marinade

1 ½ TBSP red wine vinegar

1 tsp dry mustard

1 tsp sugar

¼ tsp celery seed

Salt and pepper to taste

 

Dressing

¼ cup olive oil

1 tsp lemon juice

1 tsp dill

Combine all ingredients and place in container with marinade.  Refrigerate overnite.                                                                                                                            To serve, place marinated vegetables on bed of romaine lettuce and pour dressing over it.                                                                                                           Garnish with radishes, hard boiled eggs, top with feta cheese.
